How to Make Pizza
Storage
Iago’s Fresh Pizza Dough can be stored in the fridge for 3-4 days if bought at our shop, or until the use by date otherwise.
The dough can be stored frozen for about a month. If you plan to freeze your dough, it is best to freeze it on the day you buy/receive it. We recommend moving it from freezer to fridge the day before using it, and removing it from the fridge 3 hours before stretching it. It is important that the dough comes up to room temperature.
Tuck the end of each bag under the dough so that it isn't wide open in the fridge/freezer.
Preparation
3 Hours Before Baking the Pizza:
1) take the dough out of the fridge and out of its bag 2) roll it into a ball
3) rub 1/3 teaspoon olive oil onto each dough (to make it less sticky later)
4) return it to its bag and keep it out of the fridge for 3 hours
Placing the dough somewhere quite warm in your kitchen (or in your hot press) for 3 hours, or as close to 3 hours as possible, will allow it to come to room temperature and to rise.
If you are short of time, this process can be accelerated by floating the bags of dough in a bowl of lukewarm water. Fold the bag ends over the rim of the bowl so that water will not enter the bags.
Conventional Ovens: Maximum temperature. Wait 10 minutes after the oven first reaches max. temperature before baking your pizza. Bake the pizza near the top of the oven. Cooking times range from 8 –12 mins approximately with different ovens.
Pizza Ovens: This dough is suitable for any temperature up to 450C.
Pizza Stones: It is worth bearing in mind that pizza stones take up to 20 minutes longer than ovens do to heat up. It is essential that the stone is thoroughly heated.
Fresh Mozzarella: Slice up the mozzarella about half an hour before using it and position the pieces around the rim of a plate. Excess water will slowly run down into the middle of plate. For large quantities, use a colander.
Stretching the Dough
We suggest watching a youtube video to see how the dough can be stretched. We do not have our own video at present.
Baking the Pizza
The cooking time depends on how hot your oven is.
If your oven is at 250C, we suggest trying 10 minutes. At 300C, it might take around 7 mins. At 400C, it will take approximately 100 seconds.
There is trial and error involved with the cooking times - it might take a few tries before you settle on a time that works for your oven. An undercooked pizza will be doughey and not crispy underneath. An overcooked pizza will have a hard crust.
