Stilton is traditionally consumed over Christmas and New Year because of the lucky coincidence of the Spring milk production reaching its optimum maturation during this period. In times gone by, it was a Christmas tradition in big houses to serve a whole Stilton after dinner. Accompanied by a bottle of port, the Stilton would last throughout the festive period.

We cut whole Stiltons into round sections which offer the same generous, festive appearance with a more manageable size. We offer these in two sizes:

1/3 of a whole Stilton, with approximate weight of 2.66kg, diameter of 20cm and height of 8cm. €129. You can choose a middle third or an end third, which has rind on one side.

1/2 of a whole Stilton, with approximate weight of 4kg, diameter of 20cm and height of 12cm. €195.

Differing from Colston Bassett's other Stilton because it is made with natural rennet, this is widely regarded as the best modern Stilton and that’s why we have been supplying it to our loyal customers and friends since 1993. It is exclusively stocked by Iago in Ireland.
